The Santa Pancake | Alicia Haque

One of the best things about Christmas is undoubtedly the food. Toffee nut lattes, gingerbread biscuits, holiday chocolates, and of course the big Turkey dinner, all make the festive season that bit more special. But special doesn’t always mean healthy, and when you’re trying to watch what you’re eating, it can be tricky to find festive recipes that won’t sabotage your healthy eating plan.

Santa Pancake

Instead of trying to find a light alternative to a popular Christmas dish, I decided to get creative and put a festive twist on my trusty Oat Pancake recipe  (http://www.golivexplore.com/blueberry-oat-pancakes/). All you need is a blender, five simple ingredients and a bit of an imagination and you can pull together the perfect healthy holiday breakfast (or dessert!) in just a few minutes.

Ingredients

1/2 cup rolled oats (uncooked)

3 eggs

1 banana

2 tsp baking powder

1/2 cup blueberries – fresh or frozen (optional)

Directions

1. Mix the oats in a blender or food processor for 15 seconds, or until it resembles fine flour.

2. Add the eggs, banana and baking powder, and blend.

3. Pour the mixture into a large bowl, add the blueberries and if possible, leave to sit for 3-4 minutes. This allows the mixture to thicken slightly and I find they turn out much better.

4. Heat a lightly oiled saucepan and add a scoop of mixture, enough to form a large pancake and a light layer of batter. Fry on each side for around 1 minute or until golden brown.

Topping

9 large strawberries, halved

Plain Greek yoghurt

2 blueberries

1 raspberry

Cacao nibs

Peanut butter

Start by spreading a light layer of peanut butter across the top and bottom third of your pancake, under where the toppings will sit. Then, spread a layer of yoghurt on top, add the strawberries and finish off with the eyes, nose and mouth. Et voila!
